Recipe: BePure Gluten Free Chicken Cordon Bleu
This Gluten Free Cordon Bleu recipe with a twist is a great alternative to your standard Cordon Bleu made with bread crumbs. A great salad recipe to accompany it.

Ingredients
For the Chicken:
2 Large chicken breasts
(We used Bostock's organic, free range chicken)
2 Tsp Good quality olive tepanade (optional but really yum)
1/4 Cup grated cheese
4-6 Strips of free-range bacon
Large bunch of fresh parsley
Zest of 1/2 a lemon
Salt and Pepper
1 Egg lightly beaten
1 Tbs coconut oil
Coating:
1 Cup Ground Almonds
1 Tbs Fresh thyme chopped
1/2 Tsp Smoked paprika
Zest of 1/2 a lemon
Salt and Pepper
Salad
Mixed lettuce (organic or homegrown)
1 Radish thinly sliced
1/4 Fennel bulb thinly sliced
1/4 Cup Kale finely chopped
Juice of 1/2 lemon
Juice of a whole orange
2 Tbs Cold pressed extra virgin oil
Instructions
- Heat oven to 200 degrees Celsius.
- Halve chicken breast length wise with a sharp knife.
- Combine grated cheese and chopped parsley (we whizzed them together).
- Smear one side of chicken breast with olive tapenade (if using) and then add cheese and parley mix, lemon zest and season with salt and pepper.
- Fold chicken over and wrap with bacon.
- Combine all coating ingredients on a tray.
- Dip each parcel first in the lightly beaten egg and then coat well in ground almond mix.
- Put coconut oil on oven proof dish and heat for a few minutes in the oven.
- Take out and put prepared chicken breasts in the dish. Cook on fan bake for 25-30 minutes depending on the size of the breasts (turning once).
- Prepare the salad while cooking.
- Slice chicken in half to make sure it is cooked through.
- Serve and ENJOY.
